You'll get 10 different answers from 10 different people. There is no choke you "should" use except the one that patterns best in YOUR gun.Experimentation is the key, start with the most open choke you have and work your way down.Pay attention to the warnings on the side of your tubes, make sure they say "steel ok" before trying steel shot.If you can go shoot some clay targets with your dove loads with an Ic and mod choke. Be safe, and have fun!

the owner's manual for the stoeger M2000 says its not recomended to shoot steel with the full choke. How can I shoot long range ducks and geese w/o the full choke? Do they make other choke tubes that can accomidate such loads?

Shooting steel, because of the density difference between steel and lead the following occurs. With a modified choke installed for lead shot the choke actually becomes a full choke using steel. An improved choke for lead would be a modified choke for steel and of course a skeet choke for lead would be an improved cylinder using steel. Simple enough.
