TMAC Posted August 1, 2007 Posted August 1, 2007 If you have a good no nonsense receipe that isnt too involved for duck I am all ears, cant get the wife and kids near the dinner table when I make duck or goose. Last year I saved everthing and had 20lbs of duck/goose meat converted into sausage, seemed much more popular with the family. Quote
OLTD2 Posted August 3, 2007 Author Posted August 3, 2007 Mix two bottles of worchestershire sauce with two bottles of balsamic vinagrette salad dressing Cut several large white onion wedges Wrap duck breasts in bacon strips then cover with two halves of the cut onion wedges, Secure with more than one toothpick, Marinate with the mixture as detailed above for a few hours. Make sure to have plenty of marinade on hand and a good brush Get the grill hot --- 300 F or so. make one two pans with four to five layers of heavy duty foil. fill pans with marinade and place wraps on foil cooking slowly for 1-1/2 hours brushing with marinade frequently. Cook until onions are carmelized anf meat is done. Thank God for the freedom to hunt and for His Blessings and enjoy! A glass of Shiraz compliments the meal nicely. Quote
